Winter Citrus Salad with Honey Dijon Vinaigrette

This winter citrus salad is not only visually appealing but also packed with refreshing and vibrant flavors. Adjust the quantities based on the number of servings you need.

Ingredients:

  • 4 cups mixed salad greens (spinach, arugula, and/or mixed greens)

  • 1 orange, peeled and segmented

  • 1 grapefruit, peeled and segmented

  • 1/2 cup pomegranate seeds

  • 1/4 cup chopped almonds, toasted (substitute with your favorite nut)

  • 1/4 cup crumbled feta cheese (goat cheese is also a great option)

For the Honey Dijon Vinaigrette:

  • 3 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey

  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad:

    • In a large bowl, combine the mixed salad greens.

    • Add the orange and grapefruit segments on top of the greens.

    • Sprinkle pomegranate seeds and toasted almonds over the salad.

    • Crumble cheese over the salad.

  2. Make the Honey Dijon Vinaigrette:

    • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, and honey until well combined.

    • Season with salt and pepper to taste.

  3. Assemble the Salad:

    • Drizzle the Honey Dijon Vinaigrette over the salad just before serving.

    • Toss the salad gently to coat the ingredients evenly with the dressing.

  4. Serve:

    • Divide the salad among individual plates or serve it in a large salad bowl.

    • Garnish with extra pomegranate seeds, walnuts, and feta cheese if desired.
